A hot food trend right now is the infamous Poke Bowl – very popular in Hawaii and is currently sweeping the Greater Toronto Area by storm. I’m seeing a lot of Poke Bowl restaurants open up around the city and the neighbouring areas – Mississauga, Oakville, etc.

Like with any food that catches my attention, I made my own version at home! It’s very easy and quick, since there’s no cooking involved. Even if you’re a novice cook, you can’t mess this up!

Easy Poke Bowl Recipe with Salmon and Avocado

This recipe serves two (as meals) – this is a BASIC recipe. Feel free to add more ingredients as you’d like!

Ingredients:

  • 3 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 tsp rice vinegar
  • pinch of sesame seeds
  • dried seaweed snack (I get mine in snack packs from Costco. I am always snacking on these… so good!)
  • 2 cups of fresh boneless and skinless salmon, cut in cubes
  • 2 cups of brown rice (you can use white rice if that’s your preference)
  • 1 avocado

Method:

  1. In a small bowl, mix the soy sauce, sesame oil, rice vinegar and sesame seeds
  2. Put your salmon cubes in the bowl and mix well to make sure they are coated in the soy sauce mixture
  3. Let this sit for at least 5 minutes; while this is marinating, proceed to the next step.
  4. Cut your avocado into cubes; set aside
  5. Set up the layers for your bowl – rice at the bottom, avocado on side and the salmon cubes on the other. Top with the dried seaweed… ta da!
