This is easily one of the simplest salads to make and it tastes amazing! I’m a big fan of watermelon and there’s something about combining it with feta that just creates a magical experience in my mouth. Those Greeks sure know how to create yummy food!
Note that it does not refrigerate very well – it will get watery and the cheese will “melt” in the water (gross). I would suggest eating it on the same day you make it, which makes it perfect for dinner parties or BBQs! And best of all? No clean up because you can use the watermelon as your serving bowl!
Ingredients (the measurements are very flexible, so use as little or as much of anything. The final product will depend on your taste buds – the best kind of recipes, amirite?):
- A whole watermelon (I used a small one because it was just me eating it this day)
- Crumbled feta cheese (I eyeballed about 1/2 cup)
- Fresh mint, chopped
- Baslamic vinegar or if you don’t like balsamic, you can use fresh lime juice
- Black pepper to taste. No need to add salt as the feta is already salty.
Directions:

If you want to use the watermelon as your bowl, use a melon baller to get the “meat” out. (My melon baller sucks lol) If not, you can just cut them into cubes. (You’ll have leftover watermelon juice when you’re done.. drink it! So yummy!)

Add everything in a bowl and mix together!

Put back in your hollow watermelon and ta-da! Das it. Really!
If you’re bringing it to a party, just wrap it in plastic wrap and keep it chilled before serving.


This salad is very refreshing and has such a unique taste! I love making simple salads to bring to BBQs and this one will be one of my staples this summer.
(Yes, I took a photo with the salad because I love it so much. Made this after a run, so I’m a little flushed in the photo lol)
